A new era is arriving in Flemington as The Union Hotel, a Tribute Portfolio Hotel prepares to officially reopen on Wednesday, July 15th, 2026, following a transformative redevelopment that reintroduces one of New Jersey’s most historic properties as a modern boutique hotel and social destination.

Originally established in 1814, The Union Hotel has long stood at the center of Flemington’s history and culture. Following an extensive restoration, the landmark property is reopening with 100 thoughtfully designed guest rooms, including 10 suites, elevated dining concepts, nightlife experiences, curated gathering spaces, and pet-friendly accommodations within Courthouse Square on Main Street.

Conveniently situated between New York City, Philadelphia, Bucks County, and surrounding suburban communities, the hotel is positioned as a destination for weekend escapes, celebrations, meetings, weddings and standout dining experiences for locals and visitors alike.

The project is led by developer Jack Cust, whose vision centered around honoring the building’s legacy while introducing an elevated hospitality, dining, and social experience to the region. Through years of business and community investment, Cust has played a major role in the continued revitalization and growth of Flemington and the surrounding area.

The hotel will operate under Concord Hospitality, one of the country’s leading hotel management and development companies, and will be part of the Marriott Bonvoy portfolio, bringing nationally recognized hospitality standards and loyalty benefits to the property while maintaining its independent identity and boutique experience.

CULINARY EXPERIENCES

Leading the property’s culinary vision is Executive Chef Andrew Lattanzio.

At the heart of the program is Jersey Prime, a modern Italian steakhouse blending timeless hospitality with the energy of a contemporary supper club. Designed to deliver an elevated yet approachable dining experience, Jersey Prime will feature top-shelf steaks dry-aged in-house, seasonally driven house-made pastas, coastal-inspired seafood, an expansive raw bar, handcrafted cocktails, and a thoughtfully curated wine program.

Rooted in the Italian tradition of sourcing with intention, Chef Lattanzio’s menu will also highlight sides and seasonal ingredients sourced directly from Hunterdon County farms committed to sustainable and organic growing practices. With a vibrant social atmosphere and sophisticated design, Jersey Prime brings metropolitan-caliber dining and nightlife energy to the region, creating a true destination for hotel guests and local diners alike.

Courthouse Square will also debut FIELDHOUSE SOCIAL later this year, an elevated entertainment-driven sports bar combining immersive gaming, chef-driven food, self-serve beverage experiences, and high-energy social programming. Featuring duckpin bowling, golf simulators, interactive darts and shuffleboard, large-format game viewing, self-service beer and wine walls, signature cocktails, and fresh meticulously prepared casual cuisine. FIELDHOUSE SOCIAL is designed to serve as both a local gathering place and regional entertainment destination.
